Preparation time: 15 minutes
Cooking time: 35-40 minutes

recipe ingredients:

125g butter, softened
1 cup caster sugar
Finely grated rind of 1 lemon 
3 Extra large eggs
1 tablespoon lemon juice
1.5 cups Self-raising flour, sifted
1.5 Greek-style yoghurt
Icing sugar, for serving

how to prepare

1. Pre-heat oven to 180c conventional / 160c fan forced.   
    Grease (塗上奶油) and line base of a 20cmx5cm cake pan.

2. Beat (攪拌) butter, sugar and lemon rind (檸檬去皮) in a bowl until light  
   and creamy.
   Beat in eggs, one at a time beating well after each addition.

3. Fold in lemon juice then flour , alternately with the yoghurt until 
    combined.
   Spoon into pan and bake for 35-40 minutes or until a skewer inserted 
   into the centre comes out clean.

4. Cool in pan for 15 minutes then remove to a wire rack to cool.
    Dust with sifted icing sugar and serve with berries and cream 


Tips: the yoghurt gives this cake some tang and extra moisture.
